Vinification and aging

Winemaking at Domaine Coche-Dury is a meticulous process that respects the raw material. After the grapes are hand-harvested, they are gently pressed to extract the juice. Alcoholic fermentation takes place in oak barrels, with a moderate use of new oak to avoid masking the fruit. Aging lasts approximately 12 months, during which time the wines refine and develop complexity. Regular lees stirring enriches the wine, adding texture and depth. This artisanal approach allows for the production of exceptionally pure white wines, true to their terroir.
