Vinification and aging

Winemaking at Domaine Faiveley is a meticulous process, respecting Burgundian traditions. The hand-harvested grapes are gently pressed before fermentation. Fermentation takes place in temperature-controlled tanks, preserving the freshness and purity of the aromas. Aging occurs in oak barrels, some of which are new, to impart a subtle touch of oak. This aging method, lasting 12 to 18 months, allows the wine to develop its complexity while harmoniously integrating the oak notes. Each step is carefully considered to enhance the expression of the terroir.
