    Vinification and aging

    Winemaking at Domaine Faiveley It is a precise alchemy where tradition and innovation meet. After a carefully selected, hand-harvested grape selection, the grapes are destemmed and gently crushed. Fermentation takes place in stainless steel tanks, allowing for optimal temperature control. The wine is then aged in oak barrels, some of which are new, for 12 to 16 months. This aging process adds further complexity while preserving the authenticity of the terroir. The final blend is crafted with care, offering a perfect balance between power and finesse.
